The source name can be simply pyyaml itself, as it already tells about the python world (and python-pyyaml is weird xD). Names with python, py, etc. in them doesn't necessarily have to be renamed. It's better to keep in mind that python- namespacing isn't a hard enforced rule per se, but it's preferably added to source package names from the python ecosystem that isn't famous enough on its own or doesn't really have utility outside the python world. That said, you're indeed correct that it shouldn't be python3-*.
