Also funnily enough, `apt purge ibus` (and related packages) then `rm -r
~/.config/ibus ~/.cache/ibus` solves the issue as well, I guess in that case
GNOME falls back to some internal IM handler? Honestly inscrutable to me what
the physics of the whole thing is, but removing ibus altogether gives me back my
dead keys and that's all I need to communicate with vaguely european-shaped
lifeforms, so that's great.

I should add that upstream doesn't consider this a bug (see forwarded),
and that I *didn't* have a compose file *at all* (like, I suspect, most users),
and this is what breaks users.
