I forwarded this issue upstream and talked to David via irc. He plans to change
the soname in 3.2.

To address the issue for 3.0, we intend to add Breaks: gnome-disk-utility (<<
3.0) to libgdu-gtk and bump the versions in libgdu-gtk's symbols file. This will
avoid partial upgrades.
gnome-disk-utility is currently the only rdep of libgdu-gtk so this should be an
acceptable compromise.
