Actually I could read the document fine if I could do
< file.pdf pdftotext | texttopdf > file.pdf

The only problem is there is no texttopdf command (that of course would
restore all the extra structure.)

I mean why can't there be a way to tell xpdf "please ignore any font
hints, and just use the default for those code points".

There must be some default stored somewhere.

I mean I can extract the Chinese fine with pdftotext, it's just that
xpdf is trying too hard to please me.

Sorry, all I know is "Can't read anything scholarly anymore on Debian."
Force to 1. Don't bother reading Chinese anymore. Or 2. Don't bother
reading anything scholarly anymore.
