If you clear (ctrl-k) the package Options | "UI Options" | "The default grouping
method for package views" the selection does not survive a restart of
aptitude.  I think it causes the option to not be written to
.aptitude/config rather than be written with a "" value.  And the
restart detects the missing value and populates the default value
"filter(missing),task,status,section(subdir,passthrough),section(topdir)".

If modify .aptitude/config and set:

aptitude::UI::Default-Grouping ""

it works as expected.
