Apparently, this one was the result of a bad build-dependency (already fixed), 
not nix itself.

I'm currently doing a "debbisect" as we speak and will hopefully be able to 
tell you exactly when and why nix started working again (then I'll do the reassign + 
affects which I always suggest in the bug text). (btw: this is a great tool, you should 
try it!)

As for the reduced chroot, the only caveat is probably that you should not use 
debootstrap from bookworm anymore, as it includes packages of priority required 
which are not build-essential. This is fixed in the trixie/sid version, but as 
I said it's unlikely to be the reason why nix did not build before and now it 
builds.
