I don't think I've ever observed that (though I simply might not have copied data to USB, when I put heavy IO load on my dm-crypt). Maybe a better place for this would be the cryptsetup mailing list (though cryptsetup itself, is likely not the problem but rather dm- crypt)... but there one may simply meet quite a number of experienced people.
