Hi, I was able to launch GNOME/Xorg finally[1] and Praat works there just fine. The problem only happens with GNOME/Wayland. Are you able to reproduce with GNOME/Wayland?
Other GTK3 programs on GNOME/Wayland seem to work OK, e.g. I tried Totem / Video player. Maybe Praat has some X11 specific code that is now causing trouble? Joonas [1] (unrelated to this bug) One theory I have is that mesa3d might have race condition on /dev/card0 lock and that caused mesa3d not to be able to fully load (because x11 log had permission related error on card0).
