Thanks for your bugreport! Pandoc targeted Buster (the next stable Debian release) is updated as much as possible with the dependent libraries available. As soon as those libraries gets updated - which will happen at some point _after_ Buster gets released - Pandoc will get updated too. It is unlikely that a newer pandoc will get backported to stable, due to the complexity of backporting Haskell libraries.
