Since this package is reproducible, I tried to build it with and without postfix being installed and I got the same .deb in both cases. Therefore the build-dependency on postfix is not required at all and may/should be removed. Trivial patch below. [ Why would one need postfix being installed anyway? It is certainly not a package containing *.h header files. Even if the configure script is so old that it needs to "detect" that /usr/sbin/sendmail is present, this could always be hardcoded instead ].
