Yes, something comes to mind : is the server-program variable set ?

If not, gnuserv-program is normally set via :

  (defcustom gnuserv-program "gnuserv"
    "*Program to use as the editing server."
    :type 'string
    :group 'gnuserv)

So my last guess is that it is set somewhere in your config files
(just a guess).  In that case, grepping through them would help.
