My mistake, sorry. The build just worked because libgnome-dev depends on libdb3-dev. But gnucash itself indeed uses Berkeley DB (e.g. in 'src/gnome-utils/window-help.c'. So it is not as easy as I thought to get rid of the dependency or to upgrade to a newer version of Berkeley DB, at least not without also changing something in 'libgnome-dev'.
