I tried to overwrite those affected xmp files from a backup-drive, but
this had no affect.
Then I found this

dt uses the xmp as backup sidecars, in case the image is not found in
db (because parsing xmp is slow).
I don't have a backup of the db.
Editing the db entries one by one would be a difficult task, I think it
would be easier to do the stupid job and selecting all those hundreds of
photos as a collection in lighttable, go to darkroom with the lens
correction module open, toggle from one image to the next and just reset
the module - this will apply the settings from the exif data.
It's weekend and the weather shouldn't be so good ...

I think that the module should have two different "auto" ticks, one for
the lens make/model and the other for the focal length/distance etc
parameters, so that you can decide what will be applied as-is and what

darktable, and I have no idea on how complex could be implementing this
in a backward-compatible way...
BTW if you read the linked thread, there is a similar problem for
auto-exposure module, and I do not know if for others modules.
Summarizing, there is not a clear way to separate "reapply with exactly
this parameters" or "reapply recalculating the auto part". In the case
of the lens correction module is even more complex, given that sometime
you want to force one of the thing (model) and not the other (focal
length, etc.).

The trouble is that this applies the settings exactly as I store
them, including lens model, focal length, etc, what I want to do is
have lens correction applied and automatically apply the correct,
relevant settings. Is there a way to do this?

You might look at the associated xmp files and remove the areas related to
lense correction, but you might also need to open the library and make
similar changes there; use sqlitebrowser (I would save an image of the
library first, jic).
