NFS share your maildir storage location on the new server.
Temporarily close down the old servers mail services
Move the maildirs to the new server
Mount the NFS share on the old server into the same location as the maildirs
were previously stored in
Restart your mailservices on the old server, all will run as was from both
servers (provided you've configured the new one correctly with users etc).
When you are ready to close down the old server, make your DNS changes to point
everyone to the new server, and block inbound smtp, allowing the old server to
deliver and empty its queues, then in a day or two, power it down for the last
time and undo the NFS share on the new server if you like!

old one) to another (the new one). Both imapds are maildir based.
