I'm not familiar with all those options. I'd suggest following the
options in the book and get things working before adding the other
options. Just test with any relevant iso to see if the base system is
working.
You are using vde and I've never used it so I can't help there. Sorry.
Why don't you just use a bridge as shown in the book?

Well, I always liked the vde way of setting up a dedicated network for
my server vm's, but something's changed, I just don't get it to work and
both the mailing list and forum of vde seem dead as a dodo. So, I've
followed your advice, set up the bridge stuff, which works like a charm
and so I'll be able to replace my ubuntu server in a few week's time
(just samba, subversion, git and php missing....).
