New update :

An alternative solution is to add \usepackage{underscore} just 
before\begin{document} 
(instead of changing the catcode or loading the hyperref package).

But for the doi, at least with the elsearticle-num bibliography style, the 
underscore displayed is narrower than the real underscore _, it's more like a  
̲ (and when copied from the TeX Preview, it's only a space).

Perhaps it's a better solution (despite the narrow _ and that it becomes a 
space when copied).

I hope all the suggestions here and in the previous mail can help other users, 
and perhaps the BibDesk authors can modify the file ~/Library/Application 
Support/BibDesk/previewtemplate.tex with one of the suggestions.

For the narrow _, it's perhaps only a bug in elsarticle-num and other 
bibliography styles which displays the doi field have not this bug.
