I'm stuck on OS 10.3.9 and things may have improved but Finder's
"open with" does some peculiar things with resource forks that you

If you change "all files of this type" there is no penalty but if
you just change a couple you get a copy of the selected
application's icons - some 50 kB - of resource fork in each and
every file you change. I think it's so that Finder can show the
pretty picture in its windows.
Finder refuses to be clear about the phrase "this type" and, without
an extension, whonoze?
Which is exactly why I never use the Get Info method. It's lame and foolish.
Changing the creator type metadata is the best method by parsecs. It
does exactly what you want, nothing that you don't, and is 100%
reliable. After all, this is what the metadata was *designed* for.
(Duh!)
