Yes, you could have both Asterisk and HylaFAX running on the same box. HylaFAX does not require a lot of resources (CPU, RAM, HDD) for small deployments. I've had HylaFAX running on P-75s before successfully as a one-line receive-only system. I wouldn't recommend it, but that should give you an idea of the minimum-requirements.
