The uC in uClinux (http://www.uclinux.org/) stands for micro-controller (the stylized u being mu in greek) and it is one of the major efforts to run Linux in an embedded environment. It is not as simple as installing Asterisk on a different distribution since uClinux runs on systems without a Memory Management Unit (MMU) - as well as systems that generally have limited storage and memory resources. That's why I'm posting my query to the developer list.

I'm new to the dev list. I tried searching online about running
Asterisk with uClinux and found very little. Is anyone successfully
doing this? Is there some web page that will direct me on how to do
this? I was very surprised that there was nothing on the voip-info.org
web site that even mentioned uClinux. Surely I can't be the only one
interested in this...

I've never heard of uClinux, but you'd probably get a better response
if you asked usage-related questions on the asterisk-users mail list.
Someone there might know something about uClinux.
