Julie, You can use the class manager to add a $\NULL$ menu to the fields, and then use workflow to attach the correct menu. I've done that with the Floor and Room fields. (we are on ARS 7.1 / CMDB 2.1. I assume that hasn't changed for 7.6.04)
As far as getting SynchUI to work, it doesn't work if you have disallowed unqualified searches (again... for our version at least). Enable unqualified searches and see if that helps.
