Google for “extract pdf to excel” and you get a few available products that extract pdf data to excel. You might be able to use one of them from the command line.
I haven’t done exactly what you want but recently was searching for extracting to MS Word, and there are utilities that do that. You got to pay for most of those and my requirement was for personal reasons, so I stuck to cut and paste instead of paying for a one time use..
