You may already be aware of it but there is a very basic virtual keyboard already included in the Weston project: https://cgit.freedesktop.org/wayland/weston/tree/clients/keyboard.c Maybe this could serve as an example at least. Other than the maliit project I am not sure there exists one. SailfishOS seems to be using the maliit project for their implementation of a virtual keyboard. I am not sure their implementation is Open Source though.
