So the solution here finally dawned on me. In case someone lands on this bug
via search, here goes:
--includedir="%_includedir/%name" \
When passing the "standard" options to meson, they should be passed with --foo
and not -Dfoo

New build systems are a bugger sometimes ;-) - but this was indeed not a bug.
