no it's not a caching problem
we tried with 3 different browsers, in private navigation mode, and with 3 differents accounts: same results.

Sigantures can be edited and settings saved, no error reported, but the signature are not recorded

I can not reproduce your problem, neither in my test system nor on SOGo demo site.
My changes on signatures are always stored.

As long as you can add a new one, I don't see the problem.

Problem is that people can remove the default identity while they don't have any other ifentity set. This is not a regular behaviour as you may end with no identity at all. Plus, our accounts are managed through LDAP, we can avoid changing passwords through SOGo (which is what we do) so allowing people to change their default id is not an expected behaviour. At leat, is there a quick and easy way to remove the ability to add/ delete identities?

I just checked this.
After removing the default identity (and storing that change), when you relogin to the account, it will be there again.
Therefore it seems, you can not delete the default identity completely.
