It really is not easy. The best thing may be to start with a good skin & delete / change selectors, or start cutting & pasting. The minimal still has some CSS in it and it isn't 100% maintained so there may be things in there that do not need to be and there may be things that should be there that are not. Either way, building your own skin will be a lot of work.
