Not sure, if you still need the answer, but if you still do, check if you
can use the server's default TimeZone:

public class CustomDateTimeConverter extends DateTimeConverter {
        
        public CustomDateTimeConverter() {
                super();
                setTimeZone(TimeZone.getDefault());
                setPattern("yyyy-MM-dd HH:mm");
        }
        
}
