<excludes> should take a pattern, not a series of <exclude> elements... :)
So, I've put that :
<plugin>
<groupId>org.apache.maven.plugins</groupId>
<artifactId>maven-war-plugin</artifactId>
<version>2.0.2</version>
<configuration>
<excludes>**/test/*.class</excludes>
</configuration>
</plugin>
and it works :-)
