You should be able to do all of this generally with the jar-with-dependencies configuration in the assembly plugin.
Looking at your assembly descriptor, your .groovy, .properties, and .png files should not be in src/main/java but rather src/main/resources. Then they would have been packaged automatically with the rest of the project class files when you allowed Maven to do its normal packaging. Of course, if you have it working now, there's not much reason to keep working on it. But I think there are some non-standard file locations that you are using etc which are the source of some of your problems.
