What do you expect to happen with the specified artifact names?

The extra entries defined in the <manifestEntries/> tag are copied verbatim (with expressions like ${project.version} interpolated) to the manifest. So if you specify a artifact name (groupId:artifactId:version for example) it will appear as is in the manifest.

Why do you need to explicitly specify the classpath? Is <addClasspath/> not working for you?

It would be better if you would describe the problem you want to solve, then someone can propose a solution.

the ejb-plugin accepts the same <archive/> configuration as the
jar-plugin:
   <plugin>
     <groupId>org.apache.maven.plugins</groupId>
     <artifactId>maven-ejb-plugin</artifactId>
     <configuration>
       <archive>
         <manifest>
           <addClasspath>true</addClasspath>
         </manifest>
       </archive>
     </configuration>
   </plugin>
