Interestingly Xwayland thinks the screen is portrait:

XWAYLAND2 connected 2160x3840+0+0 (0x3d3) normal (normal left inverted
right x axis y axis) 190mm x 340mm

but the BIOS and Xorg think it is landscape:

so that makes me think it's just mutter/gnome-shell giving the wrong
info to Xwayland and certain apps.

Do you find the same bug in Xorg sessions? Try logging into 'Ubuntu'
instead of 'Ubuntu on Wayland'.
