Those stack traces in the log are unfortunately likely unrelated to any gnome-shell freeze. And I assume the freeze is the main issue that you're reporting(?).
Please start by uninstalling these extensions: '[email protected]' '[email protected]' reboot and then tell us if the problem goes away. Please also clarify what the problem is exactly.
