Thanks for finding that out. There is a ppa for cutting edge graphics if you want to see whether the bug is already fixed in newer versions: https://launchpad.net/~xorg-edgers/+archive/ppa Not sure though how much newer than the stock natty nouveau they currently are.
A method to unload the nouveau module: http://nouveau.freedesktop.org/wiki/KernelModeSetting#unload It shouldn't freeze if it isn't loaded.
