The main issue here is resolved... I can right-click and extract successfully from all the multi-file and single file rar archives I could find laying around on my hard drives.
The secondary issue (with the extract dialog inside of file-roller not responding to extract unless you pick a folder) is still there. I should probably open a second bug or find an existing bug for the secondary issue.
