Allright, sorry about that. On top of your remark, I discovered that with IMAP accounts, Evolution doesn't enable filters by default. When I enable this setting manually (through Preferences > Edit > Receiving Options tab), it seems to work fine. So my problem wasn't even a bug, merely a default setting which (at least in my case) is sub-optimal.
