I agree that nautilus could, in these circumstances, tell im Mb how the current copy process exceed the available size. This would help the final user.
However, unless I'm wrong, I think that we can't do anything about the main problem : according to the file system and the quantity of files to copy from a filesystem to another, the final available size can always differ.
