This problem is bug 194970 (because Firefox and Thunderbird does not have desktop files that pass the desktop-file-validate test) I already provided patches to Asac so he will be able to fix this very quickly. If you want to see the icons appear, just drop the Desktop file of Thunderbird and Firefox on a text editor like gedit and remove ".png" in the "Icon=thunderbird.png" line, save the file and the icon will appear.
