Quick addition based on a manual scan of apt-term.log before sending the tarball: the sudo-rs postinst output itself shows no error or warning — clean "wird eingerichtet" followed immediately by the expected update-alternatives line. coreutils-from-uutils was indeed installed in this same transaction, but ~8600 terminal lines earlier than sudo-rs's own configuration step, and /usr/lib/cargo/bin/sudo is referenced exactly once in the entire log (the update-alternatives line). So a straightforward "something later overwrote the file via cp" theory doesn't seem to hold up from what's visible here -- whatever's happening looks silent even at the terminal-output level. Hope the full logs help narrow it down further.
