The GNU Coreutils maintainer Collin recommends to use `uname -m` instead
as per:

Interestingly, GNU Coreutils also returns "unknown" for `uname -p` by
default. We have traditionally carried a patch for this on Ubuntu to fix
it:
https://git.launchpad.net/ubuntu/+source/coreutils/tree/debian/patches/80_fedora_sysinfo.patch?h=ubuntu/noble

IIUC, it seems that omitting `uname -p` was a deliberate decision.
