On the NFS server, is the underlying filesystem a RAID or MD or other
virtual device?

If so, you need to share it with an explicit fsid in /etc/exports, for
example add fsid=1 to the options for the share.

Otherwise it gets a new random fsid after reboot and the clients can't
find the old filesystem (by fsid) any more.
