I have just tried to recreate the behaviour described above on a Ubuntu 26.04 USB Live Stick system, and I was able to reproduce it in this clean install (just installed `sudo apt install gnome-tweaks` to make the setting). So it seems that it is not related to the update process itself, only to 26.04 itself, if that's of any help.
