This is mostly limitations in Calamares upstream. The current best way
to replace an existing encrypted installation is to use KDE Partition
Manager to delete the boot and root partitions of the previous install,
then use "Replace partition" to install new boot and root filesystems
into the empty space created by doing that. Obviously, this requires
data to be backed up first.
Calamares upstream would likely appreciate contributions that add the
functionality you're looking for.
