There's some troubleshooting advice on the Pipewire wiki[1] you might
want to try.

I'd also take a baseline when the sound is working by capturing the output of 
pw-dump, and then diff'ing the same command when the sound drops out. Also 
check bluetoothctl info 00:1B:66:E9:99:8F and see if the audio sink has a UUID 
present after the drop. If it doesn't that  would suggest a firmware issue, if 
it's there but Pipewire doesn't see A2DP, more likely a Pipewire/BlueZ issue.

Getting the btmon traffic log as described in the wiki when the issue
happens will be handy to add to the bug.
