You need to install,

pipewire-bin-dbgsym=1.0.5-1

Or drop the version entirely. For some reason you selected the version
from noble-updates which doesn't appear available on your machine.

I'd grab some other dbg packages as well to cover more bases,

sudo apt install pipewire-bin-dbgsym libspa-0.2-modules-dbgsym libc6-dbg
libglib2.0-0t64-dbgsym

Hopefully now you get more interpretable results from,

timeout 5 perf record --debuginfod -g -p `pidof pipewire`
perf report > pipewire_perf.out

Please paste the results again.
