From your logs, I see the error was caused by a missing /etc/nginx/nginx.conf.
I also see nginx was previously installed and purged. So it's likely that the
file was removed before the re-install.
I was able to reproduce this with
# apt install nginx
# rm /etc/nginx/nginx.conf
# apt-get purge nginx
# apt install nginx
Did you remove the file manually before attempting to re-install?
