Hello Pushkar, I've gotten a response from the Debian maintainer for librdkafka, and he responded that:
"2.10.x and 2.11.x were released while Debian was in its trixie pre-release freeze. trixie was released a couple of weeks ago, so this unblocks further uploads again." Furthermore, he mentioned that he is "planning to work on updating the package to the latest upstream version and packaging standards in the next couple of weeks" Which is way Debian still doesn't have anything further than 2.8. As such, it is a matter of waiting before the newest version lands in Debian.
