I went into software & updates > additional drivers and swapped from my
current driver (nvidia-driver-575-open) to the nvidia-driver-575
(proprietary).

I then performed a reboot... the system appeared to reboot and was
running off of my CPU's graphics (I tried nvidia-smi and it didn't
return anything. additionally, my GPUs had their fans running
continuously like they do on start-up/when they aren't registered)

Next, I ran sudo apt install nvidia-open -which installed the newest
driver. After rebooting, things are ALMOST back to normal. I had an
issue with my second monitor displaying and lost them all when I was
trying to disconnect/reconnect them to test... I did ssh in and see that
one of my graphics cards was loaded with about 10GB of RAM usage
(usually it'll run at about 2GB when I've booted with practically
nothing running). I did another reboot and they're both back for now.
I'll see if the issues persist, but this may now be an issue with the
nvidia drivers.
