Assuming /usr/share/applications/ is fully populated and you have logged
in again recently, it sounds like a problem with the pagination or
scrolling. That *can* be caused by extensions, which is why I asked to
try without ubuntu-dock. Other than those, I can only recommend a very
big hammer that would remove all customisations and revert your desktop
and apps to their default settings:
dconf reset -f /
The result of that is basically like a fresh installation you will need
to customise everything again. But if it solves this bug then at least
we know the cause was somewhere in a previous customisations.
