I have had a similar problem. Two of my vm's were upgraded last night from linux-image-6.8.0-53-generic:amd64 6.8.0-53.55 to linux-image-6.8.0-56-generic:amd64 6.8.0-56.58+1 and lost the network connections.
After restoring one of them and running the upgrade manually seems to work.
