The problem occurs after the Video output to the monitor is switched off
(the LCD monitor said it was powering off) following the gradual fade
out of the login screen. i.e. I guess this is when the video card is put
into deep sleep or power saving mode?

The photo attached was taken after I pressed the docking station power
on button to wake the laptop up (wagging the mouse did nothing, so I
assume the laptop had gone into a deep sleep state or whatever Ubuntu
does when the laptop isn't used for a long time.

So it looks like whenever the mouse cursor pointer is stored, that
location loses its memory when the laptop sleeps, and then when it wakes
up, you end up with a big white square instead of the mouse pointer
image.
