I would like to be able to change that directory too. By default, it is located in XDG_PICTURES_DIR gnome directory. But I would like to move screenshots elsewhere so that XDG_PICTURES_DIR is only for my own personal pictures. That makes sense too me, it is the way I use XDG_VIDEO_DIR, XDG_MUSIC_DIR, etc...
